Cabernet Sauvignon has an outstandingly complex mixture of fragrance and aroma. In its taste we can feel black currant, blackberry and eucalyptus. Its bouquet might be described as that of cherry and cedar, with a hint of figs, chocolate and sour cherry. It is rich in tannin, like Cabernet Franc. Its alcohol content is rarely less than 12 per cent. Good years require a long maturation of up to 5-10 years in order to reach the best quality. Due to its thickness and dominant characteristic features it is often blended in cuvée wines. Both cabernet varieties produce good barrique wines with a distinct aroma.
